Pan-Roasted Edamame

I'm always ready for a healthy snack so why not some Pan-Roasted Edamame? All I did was add a little olive oil to a pan along with these perfect soybeans and cooked over high heat. After a few minutes I was munching on a delicious snack. And if you need to dip try serving some spicy mayonnaise alongside for that extra something special.

Ingredients for Pan-Roasted Edamame:

1 - 14 ounce bag of edamame in pods, defrosted

2 tablespoons olive oil

kosher salt

Spicy Mayonnaise for serving

Time-Saving Tip: Defrost the edamame earlier in the day before cooking.

We're ready to cook.

Add the oil to a non-stick pan when hot; add the edamame. Cook over high heat while tossing until the edamame is heated thru and slightly charred. Serve immediately with a sprinkle of salt and if using spicy mayo.

It's ready! Pan-Roasted Edamame is my new favorite snack. It comes together in just a few minutes, tastes so good, and is good for you. I think I will be making this one all summer long.
