Quinoa with Broccolini and Tomatoes


I can eat this every day. This Quinoa with Broccolini and Tomatoes is a delicious side, a great vegetarian main dish, and goes with just about anything. The nutty taste of the quinoa mixed with the sauteed vegetables is a great combination. It is delicious hot, room temperature or even cold. It is perfect for large gatherings since it can be made ahead.


Ingredients for Quinoa with Broccolini and Tomatoes:


3 cups cooked quinoa, about 1 cup uncooked

1/4 cup olive oil

1 bunch broccolini

1/2 cup chopped red onion

1 cup halved grape tomatoes, about 1/2 pint

1/4 cup pine nuts

Kosher salt

black pepper


Time-Saving Tip: You can make a big batch of quinoa and keep it in the freezer for a few weeks. Then when you're ready to use it in a recipe it will be cooked and ready to go. You can also prep all of the vegetables earlier in the day.

If the broccolini is thick cut the stalk in half lengthwise and then cut each half in half lengthwise.


Heat olive oil in a large pan over high heat. Add the broccolini to the pan. Season with salt and pepper and saute over high heat for 2-3 minutes. Add the onion and cook for another two minutes. If the pan seems too hot lower the heat a little bit. You really don't want to brown the onions. Then add the tomatoes and season with salt and pepper. Saute another 2 minutes. Add the cooked quinoa and make a little room to add the pine nuts in a small section and toss them separately until just starting to turn golden. Combine pine nuts with quinoa and vegetables. Toss until heat through. Adjust seasoning.


It's ready! This is such a tasty and versatile dish. If you want you can even add some cooked shrimp or chicken for a delicious entree. Give it a try and I know you will love it.
