Baked Cod with Harissa


I'm always happy when dinner is easy to prepare and so good. This Baked Cod with Harissa definitely fits the bill. The fish is seasoned and then tossed in a lemony harissa mixture and then baked alongside carrots and red onions. The mild harissa we get all the flavor benefits of red bell peppers without the heat. I love the combination of bright flavors in the colorful meal.


Ingredients for Baked Cod with Harissa:


2 pounds cod, cut into 4-6 pieces

2 tablespoons mild harissa

2 cloves garlic, minced

2 tablespoons + 2 tablespoons olive oil

1 pound baby carrots, halved down the middle

1 red onion, cut into 1/4 inch slices

juice of 1/2 lemon


Time-Saving Tip: Cut the vegetables earlier in the day.


Let's see what we need.

We're ready to cook.


Cut the vegetables. Drizzle them with 2 tablespoons of olive oil and season with salt and pepper.


Transfer them to a parchment-lined sheet pan—Bake in a preheated 425-degree oven for 25 minutes. The carrots should be pretty tender.


While the vegetables are in the oven, combine the harissa, lemon juice, garlic, and 1 1/2 tablespoons of olive oil. Season the fish with salt and pepper.


When the vegetables are ready toss the fish with the harissa mixture.


Nestle the fish in the vegetables and place in the oven Bake 8-12 minutes until the fish is opaque.
