Oatmeal might be my favorite all-time breakfast. I usually like it simply prepared topped with some fresh fruit and honey. But some mornings do call for something a little more luxurious. As I eyed the bananas on my counter I decided that Bananas Foster Oatmeal would be delicious. And boy was I ever right!
Ingredients for Bananas Foster Oatmeal:
2-4 servings
Oatmeal:
1 cup Quick Cooking Steel Cut Oats
2 cups + 1/2 cup Oatmilk
1/2 cup water
1/2 teaspoon vanilla extract
1/8 teaspoon almond extract
pinch of kosher salt
Bananas Foster:
2 tablespoons butter
4 teaspoons honey
2 bananas
1/4 teaspoon rum extract
sprinkle of cinnamon
Garnish with sliced almonds and cinnamon

Let's see what we need.
We're ready to make breakfast.
Peel the bananas. Cut each one crosswise into 4 pieces and then halve lengthwise. You will get 8 pieces from each banana. After cutting the two there will be a total of 16 pieces. Set aside.
In a medium-sized pot combine the oatmeal, 2 cups of Oatmilk, 1/2 cup of water, and a pinch of salt. Simmer 7-8 minutes, while stirring occasionally, until the oatmeal has thickened. Then add the reserved 1/2 cup of milk, the almond extract, and the vanilla extract. Simmer a minute and then turn off the heat.
Melt the butter and honey in a pan. Add the rum extract and stir.
Add the bananas to the pan. Cook a minute or two and turn the bananas over. Cook another minute and sprinkle with some cinnamon. All you need to do is serve up the oatmeal and to with some of the bananas.
It's ready! It looks so good. I love it sprinkled with sliced almonds which gives it a little crunch. The combination on the creamy oatmeal, the warm sweet and cinnamon bananas is really so good. Try it and I know you'll love it!
