Beet Tartare

My older son told me about a great dish he had while eating out, Beet Tartare. He said it was delicious, so I decided to try and replicate something I have never tasted at home. I relied on my son's direction and taste buds and created my version. I tweaked my recipe for Tuna Poke and created Beet Tartare. It's light, easy to prepared, and so yummy. It's a perfect snack and ideal for Meatless Monday.


Ingredients for Beet Tartare:


Beets:

8 beets, cut into 1/4" pieces

1/2 cup minced scallions

2 jalapenos, minced

3 limes, zested


Dressing:

1 tablespoon + 1 teaspoon light soy sauce

1 1/4 teaspoons sesame oil

1/3 cup lime juice

1/3 cup olive oil

1 1/2 teaspoons prepared wasabi

1 teaspoon Sriracha

1 1/4 teaspoons kosher salt

1 teaspoon coarse ground black pepper


Time-Saving Tips: All of the ingredients can be prepped in advance and stored separately in the refrigerator. Mix everything right before serving.

Mix together all of the dressing ingredients and set aside.


Dry and dice the beets. I used prepackaged beets, which were pretty wet. I think if you roast your own, they will be drier.


I recommend having all of your ingredients prepped and waiting for you when you're prepared to make the Tartare. Combine everything and then mix in the dressing. Then pour the dressing on top and combine.


It's ready! Beet Tartare is so delicious. I'm so glad that my son told me about it because I don't think I would have come up with this one on my own. I'm already planning on the next time that I'll be making it.
