Cauliflower Faux Fried Rice


I discovered what so many of you have already known. I love riced cauliflower and I especially love Cauliflower Faux Fried Rice. It is packed with vegetables and tastes so good that it's hard to believe how healthy it is. It even has a few shortcuts making this recipe a real winner.


Ingredients for Cauliflower Faux Fried Rice:


2 - 10 ounce bags frozen Riced Cauliflower, keep frozen until using

2 tablespoons grapeseed oil

1/2 red bell pepper, seeded and diced

1 large carrot, peeled and diced

5 ounces mushrooms, stemmed and sliced

1/2 cup frozen edamame, keep frozen until using

1/2 cup frozen corn, keep frozen until using

1 small bunch scallions, sliced

1 tablespoon chopped ginger

2 cloves garlic, minced

4 tablespoons light soy sauce or light tamari sauce

1 tablespoon sesame oil


Time-Saving Tip: All of the vegetables can be prepped earlier in the day.

Now it's time to cook.


Make sure all of your vegetables are prepped before you start cooking.


Saute the grapeseed oil, red pepper, and carrots for a minute over medium-high heat. Add the mushrooms and saute another 2 minutes. Now add the edamame, corn, and cauliflower and saute another 3 minutes. Toss in the garlic and ginger and cook another minute. Stir in the sesame oil and the tamari sauce.


It's ready! This is so yummy it is impossible to have just one serving. Cauliflower Faux Fried Rice is fantastic on its own but you can also throw in some shrimp and make it a complete meal. I am sure that once you give this easy recipe a try you will be making it again and again.
