There is a reason why you always hear a bunch of oohs and aahs when serving this at a holiday celebration. It's beautiful and incredibly delicious. Leg of lamb is so easy to prepare and just requires a few ingredients. I like to combine, Dijon mustard, fresh rosemary, lemon, and garlic which promises the most spectacular seasoned lamb. I roast it on high heat to perfection. This is a family favorite in our house.
Ingredients for Roast Leg of Lamb Perfected:
1 - 6- 1/2 pound leg of lamb
Wet Rub:
2 tablespoons Dijon mustard
2 tablespoons olive oil
1 tablespoon lemon zest, 1-2 lemons depending on the size
3 teaspoons chopped rosemary
2 teaspoons kosher salt
1 teaspoon black pepper
5 cloves of garlic, chopped

Time-Saving Tips: The rub can be made a few hours in advance. The lamb can be coated with the rub earlier in the day.

We're ready to cook.
Preheat the oven to 450-degrees. Then combine all of the wet rub ingredients together in a small bowl.
Rub the mixture evenly all over the lamb and place it in a large roasting pan. Pop in the oven and cook until done. It will take about 1 to 1 1/2 hours depending on the size of the meat and how well you like it cooked. Check with the thermometer...135 degrees for rare and 145 degrees for medium. Do not over-cook! Transfer the meat to a platter or cutting board, loosely cover in foil and let rest around 15 minutes.
It's ready! Look how awesome it looks! This roast is the star so no need to make elaborate sides. I would serve this with Lemony-Cheesy Roasted Asparagus and Rosemary Roasted Potatoes for the most delicious Easter dinner.
