This cauliflower dish is packed with flavor. The seasoned cauliflower is roasted and then tossed with currants and slivered almonds. Curried Cauliflower with Turmeric goes great with roast chicken. In fact, it is so delicious that served with rice this dish makes a satisfying vegetarian entree. Try it, I am sure you will be so glad that you did.
Ingredients for Curried Cauliflower with Turmeric:
1 head of cauliflower, cut into florets
1/2 cup chopped shallots
1 1/2 teaspoons curry
3/4 teaspoon tumeric
1/2 teaspoon Kosher salt
3 tablespoons olive oil
1/4 cup currents
1/4 cup slivered almonds
2 tablespoons chopped parsley
1 tablespoon freshly squeezed lemon juice
Time-Saving Tip: You can cut the cauliflower into florets ahead of time and store them in the refrigerator.

Preheat oven to 400-degrees. Cut the cauliflower into florets and place in a bowl. Add the oil, shallots, curry, turmeric, and salt. Combine until all of the cauliflower is coated with the spices and oil. Pour in a 13" x 9" glass baking dish and place in the oven.
After roasting the cauliflower for 20 minutes give it a stir and add the almonds. Stir again and then return to the oven. Roast for about 10-15 minutes until they are done to your likeness.
Now add the currents and the parsley. and the lemon juice. Gently toss just to combine.
It's ready and delicious! This is delicious hot right out of the oven. And will be a great side to any roast meat. It also tastes great room temperature so it is perfect for a buffet or to bring to a potluck.
