Grilled Fish Tacos with Pico De Gallo



I make tacos fairly often since they are a family favorite. Today I decided on fish ones and am so glad that I did. I marinated cod with a few spices and then grilled it. Once cooked I wrapped it in a toasted blue corn tortilla along with avocado, Pico De Gallo, and a few squeezes of lime. Light, flavorful, and delicious these are perfect any day of the week.


Ingredients for Grilled Fish Tacos with Pico De Gallo:


Fish:

2 pounds cod or other white fish

3 tablespoons olive oil

1/4 teaspoon black pepper

1/2 teaspoon onion powder

1/4 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/2 teaspoon hot paprika

1/4 teaspoon dried oregano

Serve with Pico De Gallo, *blue corn tortillas, and avocado

*Once the fish is cooked I like to quickly toast the tortillas on the grill.


Pico De Gallo:

1 pound Campari tomatoes, chopped

1 cup chopped white onion

1-2 jalapenos, seeded and chopped

1 tablespoon chopped cilantro

3 teaspoons fresh lime juice

Kosher salt

pepper


Time-Saving Tip: All of the spices for the fish rub can be mixed together in advance. The rub can be put on the fish up to two hours before grilling. The Pico De Gallo can be prepped a couple of hours in advance but add the salt, pepper, and lime juice right before serving.

Combine the spices for the fish and stir in the olive oil.


Rub the spice mixture all over the fish and let it marinate in the refrigerate for 1-3 hours.


To make the Pico De Gallo combine all of the ingredients; season with salt and pepper. Once combined you're ready to start grilling the fish.


Lightly coat the grill with cooking spray. Preheat the grill to medium to medium-high. Once the fish has marinated sprinkle with salt and place on the grill. Flip the fish after about 2 minutes and it has nice grill marks. Cook another 2-3 minutes until they are cooked. You will have to use your judgment when the fish is done since it will depend on how thick it is.
