If you're thinking that grilled lobster tails topped with homemade lime butter sound pretty fantastic, you're right! The hot lobster and chilled butter with a hint of garlic are an unexpected match made in heaven. There is not much more than I can say except invite people over that you love and have a good time.
Ingredients for Grilled Lobster Tails with Lime Butter:
Lobster Tails:
4 lobster tails, any kind
1/4 cup olive oil
3/4 teaspoon kosher salt
3/4 teaspoon black pepper
Lime Butter:
2 sticks unsalted butter, room temperature
zest of 2 limes
3 cloves garlic, minced
1/2 teaspoon kosher salt
1/8 teaspoon black pepper
Time-Saving Tip: The butter can be made a few days in advance and refrigerated. It also freezes well so it can be made up to a few weeks in advance.
Let's see what we need.
We're ready to cook.
Place all of the ingredients into a bowl and beat until well blended.
If you are not using the butter right away and would like to freeze the butter it's best to wrap it up well in plastic wrap. I like to place a piece of plastic wrap on the counter. Then I place the butter on top in a log. While wrapping it up I use the plastic wrap as a guide and shape the butter into a log. This makes it easier to cut off pieces.
I like to cut the tails in half this way they grill more evenly. Using a sharp knife carefully cut thru the hard shell. Repeat until all of the tails are halved. Pour the oil on top and move the tails around so they are fully coated; season with salt and pepper.
Place lobster hard shell facing up on a preheated medium-hot grill. Grill about 2-3 minutes until there are grill markings on the lobster and then flip over. Place a few pats of butter all over the tails. Continue cooking another 2 minutes until opaque.
They're ready! So easy to prepare and so good. For me, this is pure summer deliciousness.
