Spring is in the air, and I'm ready for some lighter fare. Grilled Salmon with Pesto is just what I had in mind. When properly cooked, salmon is luxurious and needs very little to make me swoon. I seasoned the fish with salt and pepper and grilled it for a few minutes on each side. When ready, I garnished the fillets with spoonfuls of my favorite parsley pesto—a perfectly delicious main course to celebrate the upcoming season.
Ingredients for Grilled Salmon with Pesto:
4 salmon fillets, approximately 6-8 ounces each
olive oil
kosher salt
black pepper

Brush both sides of the salmon with oil—season with salt and pepper.
Brush grill with oil. When hot, place the salmon skin side up on the grill. Cook for about 5 minutes and turn over. Cook another 4-5 minutes until the desired doneness. Top with pesto.
