Grilled Skirt Steak with Pico De Gallo




If you're wondering what to grill for Father's Day wonder no more. Tender and flavorful skirt steak is rubbed with a mixture of spices and then grilled. It's then served with Pico De Gallo for the perfect meal. This is a real crowd pleaser but most important is that any dad will love it!


Ingredients for Grilled Skirt Steak with Pico De Gallo:


Skirt Steak:

3 pounds skirt steak

1/2 teaspoon black pepper

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/2 teaspoon paprika

1/4 teaspoon dried thyme


Pico De Gallo:

1 pound Campari tomatoes, chopped

1 cup chopped white onion

1-2 jalapenos, seeded and chopped

1 tablespoon chopped cilantro

3 teaspoons fresh lime juice

Kosher salt

pepper


Time-Saving Tip: All of the spices for the meat rub can be mixed together in advance. The rub can be put on the meat up to two hours before grilling.

To make the Pico De Gallo combine all of the ingredients; season with salt and pepper.


Once combined you're ready to start preparing the steaks.


Preheat the grill to medium-high. Place the steaks in a glass baking dish and sprinkle with the seasonings. Toss the meat and rub the seasoning all over. Once it is well seasoned and the grill is hot place the meat on the grill. Flip the meat after about 3 minutes and the meat has nice grill marks. Cook another 3 minutes until the desired doneness.



It's ready! It looks awesome. The skirt steaks are incredibly flavorful on their own but the rub makes them fantastic. The Pico De Gallo is the perfect accompaniment. This is great for a crowd. And I promise that any dad will find this, meal irresistible.
