Healthy Chocolate Truffles

My sons love having healthy snacks they can grab and go. So the other day, when I had a request to make a healthy treat, I had chocolate on my mind. I added dried dates, cashews, and walnuts to a food processor. I then added a scoop of cacao powder, espresso powder, and a splash of vanilla. I mixed it all up and was rewarded with the most scrumptious Healthy Chocolate Truffles. They are pure deliciousness, and the boys loved them. This will definitely be a repeat around here.


Ingredients for Healthy Chocolate Truffles:

yields 18 bites


12 Medjool Dates pitted

1 tablespoon + 1 teaspoon Cacao Powder

3/4 cup raw cashews + 1/2 cup chopped cashews for coating (optional)

1/4 cup raw walnuts

1/2 cup flaked or shredded unsweetened coconut

1 tablespoon coconut oil

1 teaspoon vanilla

3/4 teaspoon espresso powder

pinch of sea salt


Time-Saving Tip: This recipe can be made a day in advance and stored in an airtight container.

Process the walnuts and 3/4 cup of cashews until it is finely chopped. Add the coconut and process a bit more.


Add the dates and pulse until processed.


Now add the coconut oil, espresso powder, cacao, and salt. Pulse until combined.


Shape the mixture into 18 equal-sized balls and roll in chopped cashews if using.


They're ready! Healthy Chocolate Truffles are delicious and so good for you. These are the perfect sweet treats to have around the house for snacking.
