Italian Style Quesadillas


Folks just love quesadillas and Italian food so I figured I'd combine the two. The result is a delicious combination of melted mozzarella, prosciutto, and pesto sandwiched between flour tortillas. My son Ethan loves these...whether they are hot, cold, or room temperature. I like to dip them in the sauce but Ethan eats them straight up. These are perfect for entertaining and for watching the game.


Ingredients for Italian Style Quesadillas:

make 10 quesadillas


10 - 6 inch flour tortillas

3 ounce package of Prosciutto

8 ounce package shredded mozzarella

1 - 7 ounce container pesto

1 small can pizza sauce for serving

cooking spray


Time-Saving Tip: The quesadillas can be assembled a few hours in advance before cooking.


Let's see what we need.


We are ready to cook.


Spread out all of the tortillas. Spread 1 teaspoon of pesto sauce on each tortilla. You will have extra pesto.


Spread 1/4 cup cheese over half of each tortilla and cover with a half slice of prosciutto.


Fold the side with just pesto over the cheese and prosciutto. Gently press the quesadilla closed. Lightly cook the side facing you with cooking spray.


Add the quesadillas oil coated side down in a preheated pan. Cook until brown and flip over to brown second side. Before flipping coat with a little more spray. Cook until done. Cut each quesadilla in half. Gently heat the pizza sauce in the microwave.


They're ready! Boy are these yummy! These are great for a school lunch, snacking, and sharing.
