Lemon-Vanilla Chia Pudding with Berries



I just love having Chia pudding waiting for me in the morning. It's perfect for a light breakfast. I knew I wanted to top this one with berries so I kept the pudding simple but delicious with lemon and vanilla. These flavors complement the fruit and a drizzle of honey on top really ties in all of the flavors. The combination resulted in a bright and happy flavored pudding - perfect for spring!


Ingredients for Lemon-Vanilla Chia Pudding with Berries:

3 servings


1/2 cup Chia Seeds

1 - 13.5 ounce can Coconut Milk

2 tablespoon honey plus more for serving

1 tablespoon of lemon zest, from 1-2 lemons

2 teaspoons vanilla

about 2 cups of mixed berries


Time-Saving Tip: These need to be made at least 8 hours in advance.

We're ready to make some pudding!


You will need 2 cups of liquid. Start off by measuring the can of coconut milk to measure 2 cups. You will see that it is a bit short. Then add enough water to reach 2 cups of liquid.


Pour the milk mixture into a larger bowl. Whisk in the lemon zest, honey, and vanilla until well combined. Mix in the chia seeds and then pour into individual serving dishes or a bowl. Cover and refrigerate for 8 hours or overnight.


It's ready! I like to garnish these with mixed berries and honey. They're so fresh tasting and light. It makes me feel like I'm doing something good for myself. Here's to starting the day off right.
