Pernil Style Chicken


My family and I love Pernil so I decided to make a version of it using chicken. The finished product was so delicious. The chicken turned out crispy on the outside and juicy on the inside and packed with flavor. Give this easy chicken a try and I am sure you will be serving it to family and guests all of the time.


Ingredients for Pernil Style Chicken:

serves 4


8 pieces of chicken, combination of thighs and drumsticks

4 cloves garlic, minced

2 teaspoons dried oregano

1 tablespoon olive oil

2 teaspoons white wine vinegar

1 1/4 teaspoons Kosher salt

1/2 teaspoon black pepper

1/4 teaspoon cumin


Time-Saving Tip: The marinade can be made in the morning. Use disposable pans when roasting the chicken this way there is no clean-up.

Now it's time to cook.


Combine all ingredients except chicken to make the marinade. Once the marinade is ready rub it all over the chicken parts, including getting some under the skin. Refrigerate chicken for 6-7 hours.



Preheat the oven to 450-degrees. Place the chicken in pans. If you are like me and are using two pans put the drumsticks in one pan and the thighs in the other. This way if it looks like the drumsticks are ready before the thighs you can pull all of them out of the oven. Roast for about 30 minutes and check for doneness. They might need a little more time depending on the size of the chicken pieces.



It's ready! This chicken is full of flavor and you can serve any sides with it. We love it. This dish is simple enough to make for those busy weeknight dinners and it is easily doubled or even tripled for when you are entertaining.
