Roast Salmon


I can think of no better meal to celebrate on Mother's Day than with this Roast Salmon. I brush the salmon with a simple mixture of olive oil, Dijon mustard, garlic, fresh dill, and lemon zest, and roast it in a hot oven and cooking in a short time. It's so sweet tasting and incredibly delicious. It's a perfect special occasion meal whether you're all sharing a table or getting together via video; don't forget that it's all about mom.


Ingredients for Roast Salmon:


1 1/2 - 2 pounds salmon filet

2 tablespoons olive oil

1 teaspoon Dijon mustard

2 cloves of garlic, minced

1 lemon zested and sliced

1/4 cup coarsely chopped dill

kosher salt

black pepper

Combine the oil, mustard, and zest; set aside.


Place the salmon on a parchment-lined sheet pan. Brush the salmon with the mustard mixture, seasons with salt and pepper. Sprinkle half of the dill on the salmon and place the lemon slices around the salmon. Bake in a preheated 475-degree oven until the desired doneness. Roasting the salmon should take about 12-15 minutes, depending on the thickness of the fish.


It's ready! Roast Salmon is a breeze to prepare and delicious. It's excellent hot and equally as yummy eaten at room temperature. I think it is the perfect celebration meal to honor mom.
