Roasted Bok Choy with Harissa Sauce


I love roasting just about everything. For me, this mostly hands-off style of cooking always produces such great flavors with little effort. Roasted Bok Choy with Harissa Sauce is a perfect example. Baby bok choy is popped in the oven for some quick cooking and then drizzled with a sauce starring one of my favorite condiments, harissa.


Ingredients for Roasted Bok Choy with Harissa Sauce:


1 pound baby bok choy, halved

olive oil

white pepper

kosher salt

1/2 cup mild harissa

1 garlic clove

2 teaspoons soy sauce

1/4 cup chicken or vegetable broth


Time-Saving Tip: Prepare the harissa sauce up to a few hours in advance.

We're ready to cook.


Add the harissa, garlic, soy sauce, and broth to a blender or in a food processor. Process until smooth; set aside.


Coat a sheet pan with 2-3 tablespoons of oil. Transfer the pan to a preheated 375-degree oven for 3-5 minutes. Remove the pan from the oven, place the bok choy cut side down on the pan, and season with salt and white pepper. Return the pan to the oven and roast 5-6 minutes until some of the pieces are slightly golden in spots. Flip the bok choy over and return to the oven for another 3-5 minutes. Serve with some of the sauce drizzled on top.
