Sauteed Green Beans and Shallots

This is the perfect vegetable dish for so many reasons. First it is simplicity at its best and delicious. It is ideal for holiday entertaining because much of it can be prepared in advance and it goes with just about anything. And finally...remember that green bean casserole you grew up with...this is a much healthier alternative.


Ingredients for Sauteed Green Beans and Shallots:

serves 4 -6


1 pound green beans, blanched and then rinsed under cold water

3 large shallots, sliced

olive oil

Kosher salt

pepper


Time-Saving Tips: The green beans can be blanched a day or two in advance. Once blanched make sure to rinse them in cold water, dry them off and store in a sealable baggie. The shallots can also be sliced in advance and store in the refrigerator until ready to use.

Heat the pan and about two tablespoons of olive oil to medium high heat. Add the shallots and saute a few seconds and add the green beans. Season with salt and pepper. Continue cooking until shallots start to turn golden and the beans are heated thru. If you think the vegetables look dry you can add a little drizzle of olive oil. Adjust seasoning.


It's ready! The easiest recipe ever. And it's so delicious, too. This is the perfect addition to any dinner whether it is a weeknight meal or a special holiday dinner. I love making these for company since it is so simple and everyone loves it.
