Braised Red Cabbage

Braised Red Cabbage is a perfect chilly weather side dish. It goes with pork, chicken, duck, turkey, goose, and sausages. It is great for making ahead, it's good for you, and looks great. Did I mention that it's delicious?

Ingredients for Braised Red Cabbage:

serves 6

1 - 2.5 - pound red cabbage

2 tablespoons butter

1 tablespoon brown sugar

2 tart apples, peeled, halved, cored, and sliced

1 medium onion, peeled, halved and sliced

1/2 cup apple cider

3 tablespoons cider vinegar + 1 tablespoon

1/4 teaspoon caraway seeds

1/8 teaspoon allspice

Kosher salt

black pepper

Now it is time to cook!

This recipe will work with cabbage that it around two and a half pounds. A little smaller is okay, too. I rely on my Oxo Good Grips Stainless Steel Food Scale for all of my weighing needs in the kitchen. It's easy to use and has an 11-pound capacity. Click HERE for more information.

Cut the cabbage in half and cut out the core. Then slice each half into thin strips.

Melt the butter in a large pot. Add the apples and onions. Cook about 4-5 minutes until softened. Do not brown.

Once the apples and onions are softened add the cabbage. Season with salt and pepper and combine. Cook for a couple of minutes then add the cider, 3 tablespoons vinegar, allspice, sugar, and caraway seeds. Cover and cook for about 20-25 minutes stirring occasionally until the cabbage is tender. Taste and add more salt and pepper as needed. Once finished cooking stir in the reserved 1 tablespoon of vinegar.

It's ready! It looks and tastes delicious. This is one of those dishes that is great when made ahead so it is perfect for entertaining. Give it a try and I am sure you will love it.
