Garden Club Salad


This most beautiful Garden Club Salad is packed with flavor. The peppery flavor of the watercress and flowers is complemented by a delicate dressing. This salad is the star of any meal, if not for the beauty but for its assertive flavor. This would be perfect served with chicken paillards or grilled shrimp.


Ingredients for Garden Club Salad:

serves 2-4


2 ounces watercress

1/2 ounce edible flowers

3 tablespoons chopped chives

2 tablespoons coarsely chopped walnuts

2 tablespoons walnut oil

1/4 teaspoon Dijon mustard

juice of half a lemon

Kosher salt

coarse pepper


Time-Saving Tip: The walnuts can be chopped in advance.

Now we are ready to make the salad.



Combine the walnut oil, mustard and lemon juice and set aside.



The package of watercress that I purchased was 4 ounces which was more than I needed. So I used my Oxo Good Grips Stainless Steel Scale to weigh the 2 ounces that I wanted. Click HERE to learn more about the scale.



The package of flowers that I purchased was also a little more than I wanted to use. I didn't use the scale but ended up saving a few of the little ones for later. Aren't they beautiful? It's hard to believe we can eat them.



Place the watercress in the bowl. First add the chives, walnuts and then the flowers.



This is one on those salads that is presented and the dressing then drizzled all over. Don't forget to season with salt and pepper. No need to do a serious tossing.
