Avocado Toast Greek Style

Avocado Toast is all the rage these days! And for good's delicious! What's there not to love? Crunchy, toasted whole grain toast topped with glistening avocado and anything else your heart desires. This time I decided to top it with a little feta cheese, tomatoes, and fresh oregano.

Ingredients for Avocado Toast Greek Style:

1 avocado

2 sliced whole grain bread, toasted

about 1/4 cup crumbled feta cheese

a handful of colorful grape tomatoes halved

fresh oregano

Kosher salt

black pepper

extra virgin olive, optional to drizzle on toast

Time-Saving Tip: The tomatoes can be sliced ahead of time.

This recipe is pretty much a guide. You can make as many slices as you want just increase the avocado as needed. I used a half of avocado per slice of toast.

Let's make our toast!

While the bread is toasting prepare the avocado. Just sprinkle some salt on the avocado and mash it with a fork. I like it chunky.

Now it's time to build the toasts. First spread the avocado on the toast and then place some tomatoes, cheese, and oregano on top of each toast. Season with pepper, a little more salt, and if you want a drizzle of extra virgin olive oil.

It's ready! Doesn't this look great? These toasts are perfect for breakfast or lunch or even for a snack. I've even served these for dinner with a nice salad. Have fun with the garnishes and let me know if you have any great combinations.
