Best Bacon Pancakes

What's better than a luscious stack of buttermilk pancakes? A luscious stack speckled with bacon! I decided to surprise my family with this fun combination, and they loved it. The combination of the slightly sweet pancakes and salty bacon was a match made in heaven. Once cooked I topped with a little more bacon and a big drizzle of syrup for the Best Bacon Pancakes.


Ingredients for Best Bacon Pancakes:


8 slices cooked bacon, crumbled

2 cups flour

2 tablespoons sugar

2 1/4 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon fine Sea Salt

2 1/4 cups buttermilk

2 eggs

4 tablespoons unsalted butter, melted

3 tablespoons maple syrup, more for serving

2 tablespoons whole milk

1/2 teaspoon vanilla

cooking spray

serve with butter and syrup


Time-Saving Tip: Measure out all of the dry ingredients the night before so they are ready to go in the morning. Cook the bacon in advance.

We're ready to make the pancakes.


Combine the flour, sugar, baking powder, baking soda, and salt in a bowl.


Whisk together the dry ingredients and then add the buttermilk, eggs, syrup, melted butter, and vanilla.

Heat a griddle or non-stick pan to medium heat. Lightly coat the pan with cooking spray. Add batter to the pan forming any size pancakes you would like-I used a quarter cup measure. Once the pancakes start to bubble, add the bacon and then flip. If the bottoms of the pancakes are browning too quickly, lower the heat.


They're ready! Best Bacon Pancakes are totally delicious and perfect for weekend brunch. The syrup and bacon are perfect in these pancakes.
