Blackberry - Almond Oatmeal



If you visit my blog you probably already know that I'm a big fan of oatmeal. The variations are limitless and I love creating new ones. After making my husband almond toast for breakfast it gave me an idea. So I grabbed some almond butter and blackberries and the rest, as they say, is history. Next thing I knew I was devouring a bowl of goodness. The combination of the creamy oatmeal, almond butter, and blackberries is so good. It's delicious and comes together quickly.


Ingredients for Blackberry - Almond Oatmeal:

2 - 4 servings


Oatmeal:

1 cup Quick Cooking Steel Cut Oats

2 cups + 1/2 cup Oatmilk

1/2 cup water

*1 - 2 tablespoons of honey

4 tablespoons of almond butter

3/4 teaspoon vanilla extract

1/2 teaspoon almond extract

pinch of kosher salt


For Serving:

1/3 cup sliced almonds 1/2 cup blackberry preserves, room temperature

1 cup of blackberries


* Keep in mind that the preserves add sweetness to the oatmeal when adding the honey.


Time-Saving Tip: Get your bowls ready because breakfast will be ready before you know it!

We're ready to make breakfast.


In a medium-sized pot combine the oatmeal, 2 cups of Oatmilk, 1/2 cup of water, and a pinch of salt. Simmer 7-8 minutes, while stirring occasionally, until the oatmeal has thickened. Then add the reserved 1/2 cup of milk, the almond butter, honey, almond extract, and the vanilla extract. Simmer a minute and then turn off the heat.

Transfer the oatmeal to bowls and add the toppings. If the preserves are thick or cold you can pop them in the microwave for a few seconds to warm-up.


It's ready! It looks so good. Just top each serving with preserves, fruit, and almonds. This is so easy to prepare and so delicious. It's also pretty enough to serve at brunch.
