I was making breakfast the other morning and had grits on my mind. But since I didn't have any, I grabbed for a substitution and made Cheesy Farina with Eggs and Chorizo Sausage. The Farina turned out great. It was deliciously creamy and smooth. They were the perfect side to over-easy eggs and spicy chorizo sausage.
Ingredients for Cheesy Farina with Eggs and Chorizo Sausage:
serves 3 1/3 cup Farina
1 2/3 cups water
1/3 cup grated cheddar cheese or a mix of Monterey Jack and Cheddar
6 eggs
1 package of 4 Chorizo Sausages, sliced and sauteed or grilled
kosher salt
black pepper
Cooking spray
Serve with sauteed baby spinach, grilled baby bell peppers or sliced tomatoes.
Time-saving Tip: The bell peppers can be grilled in advance and gently reheated before serving.

Brown the sliced sausages in a non-stick pan. No oil is needed.
Combine the Farina, salt, and water. Bring to a slow boil and stir for two minutes, the water will be absorbed. Turn off the heat and stir in the cheese.
Crack the egg (s) in a cup or small bowl. Lightly coat a non-stick pan with cooking spray. Once the pan is heated, gently pour in the egg. When the white egg sets flip the egg over, cook about 45 seconds to a minute, depending on how you like your eggs. The firmer the yolk feels, the less runny it will be. I like to cook two eggs at a time.
Plate the Farina, spinach, eggs, sausages, and the peppers.
