Creme Brulee Oatmeal

I love oatmeal, and I eat it almost every morning. I decided to make it with a twist. This Oatmeal Creme Brulee is so delicious, nearly too delicious. Quick Cooking Steel Cut-Oats are simmered with almond milk and then flavored with vanilla and some warm spices. Raw sugar is then sprinkled on top and torched for the famous crackling crust of Brulee. It's ideal for brunch but if also delicious enough for a snack or dessert.


Ingredients for Creme Brulee Oatmeal:

5 servings


1 cup Quick Cooking Steel Cut Oats

2 cups almond milk + 1/2 cup

1/2 cup water

1/2 cup raisins

1 teaspoon vanilla

1 egg

1 tablespoon honey

1/4 teaspoon cinnamon

1/8 teaspoon nutmeg

pinch of ground ginger

5 small ramekins


You will need to use a kitchen torch or a broiler. I used a torch. It is easy and fun to use. Click HERE for more information on purchasing a torch.


Time-Saving Tip: Prepare the Creme Brulee Oatmeal in advance without putting the sugar on top. When serving cold, add the sugar and torch. Or to enjoy hot, gently heat the oatmeal in the microwave, sprinkle with sugar and torch.

Let's cook.


In a small bowl or measuring cup combine 1/2 cup milk, vanilla, egg, honey, nutmeg, cinnamon, and a pinch of salt. Set aside.


In a medium-sized pot combine the 2 cups of milk, 1/2 cup of water, 1 cup of oatmeal, and a pinch of salt. Simmer about 7-8 minutes until the oatmeal has thickened.


Now add the reserved milk and egg mixture to the oatmeal. It cannot be added directly to the pot, or else the egg mixture will scramble. So slowly add some of the oatmeal to the reserved mixture and whisk together. Add a little more this is tempering the egg mixture. When well combined, pour the egg mixture in the oatmeal while stirring.


Add the raisins. Cook another 3-4 minutes until the mixture thickens. Pour into the ramekins. Sprinkle with the 3 tablespoons of raw sugar.

They're ready! As you can see I couldn't wait to start eating. These are crazy good and are a treat when made ahead for a weekday breakfast and elegant enough for any brunch.
