Potatoes chips that are good for you and delicious? Yes! Potatoes are thinly sliced and baked in the oven to perfection. I don't know why I didn't start making these sooner. Soon you'll be asking yourself the same question.
Ingredients for Good For You Potato Chips:
2-4 russet potatoes, scrubbed and dried
olive oil
fine sea salt or regular table salt

Time-Saving Tip: Get your dip ready because once these chips are ready they will quickly disappear. Also, keep in mind that the potatoes bake in a single layer. So the more baking sheets you have the quicker the process will go. Two potatoes will fill up a couple of pans.

Preheat the oven to 400-degrees. Carefully sliced the potatoes in 1/8" slices. Pat the slices dry with paper towels.
Place the sliced potatoes in a bowl. Drizzle with a few teaspoons of oil. Don't overdo it....these are Good For You Potato Chips. I would say 2 teaspoons of oil for 2 potatoes is enough. Toss the slices with your hands doing your best to coat the potatoes.
Place the potato slices in a single layer on parchment-lined sheet pans. Bake for 10-12 minutes and then turn the slices over. Return to the oven and bake another 10 minutes or so until the desired color and they are crisp. Sprinkle with salt when they are warm. As the chips cool they will crisp up more. Repeat the process as needed.
They're ready! Yay! Look how yummy they look. They taste awesome. They are delicious enough to be eaten on their own but I love them with our Best Onion Dip Ever.
