Healthy Strawberry Spread


Sweet and succulent strawberries are perfect for preserves. In my version of Strawberry Spread, I've replaced the sugar with a little honey and added a chopped apple to the mix. The spread is decidedly strawberry and perfect for toast, yogurt, ice cream, pancakes and of course an ideal partner to peanut butter sandwiches. This is incredibly delicious and healthy, which makes it perfect in my book.


Ingredients for Healthy Strawberry Spread:

yields about 3 cups


2 pounds strawberries, chopped

1/2 cup peeled and chopped apple

3 teaspoons honey

1 teaspoon lemon juice


Time-Saving Tip: Prepare the Spread a week in advance and kept in the refrigerator.

Combine all of the ingredients in a medium-sized pot. Simmer until the strawberries soften and release liquid. With the use of a masher, press down on the fruit to crush to the desired texture. Continue cooking until a path can be made with a wooden spoon. Pour into jars, let cool, and refrigerate.


It's ready! Healthy Strawberry Spread makes it possible for me to enjoy peanut butter and jelly without all of the sugar. I love to slather this spread on muffins and mixed in yogurt. It's delicious and so fresh tasting.
