Irish Soda Bread Muffins with Chocolate Chips

What's better than a loaf of Irish Soda Bread? A bunch of little ones! Irish Soda Bread Muffins with Chocolate Chips are so delicious. These muffins are everything you love about this bread speckled with chocolate. Each bite is packed with flavor and crunch thanks to the sprinkling of raw sugar on top. These are particularly yummy right out of the oven.


Ingredients for Irish Soda Bread Muffins with Chocolate Chips:

yields 12 muffins


2 cups all-purpose flour

2 tablespoons granulated sugar

1/2 teaspoon kosher salt

3/4 teaspoon baking soda

1 1/4 teaspoons baking powder

1 cup + 2 tablespoons buttermilk

1 egg

3 tablespoons cold butter cut into small dice

1/4 teaspoon orange extract

1-2 teaspoons raw sugar

3/4 cup semisweet chocolate chips

cooking spray

Combine the buttermilk, egg, and orange extract; set aside.





Dice the cold butter.







Stir together the flour, granulated sugar, baking powder, and baking soda. Add the butter, and using your hand or two butter knives, quickly work it into the flour until the mixture appears to look like coarse crumbs.


Add the wet ingredients to the dry and mix until just combined. Fold in the chocolate chips.

Coat a standard muffin pan with cooking spray. Scoop the batter into the cups and sprinkle with the raw sugar.


Transfer the pan to a preheated 375-degree oven. Bake for 15-20 minutes until a toothpick inserted into one of the muffins comes out clean.
