Air Fryer Zucchini Fritters


I have the perfect recipe for all of that beautiful zucchini filing up your garden. Air Fryer Zucchini Fritters are packed with herbs, feta, and flavor. I cook mine in the air fryer, which means they are also healthy! And I love to serve these with a dollop of Greek yogurt for a little extra deliciousness.


Ingredients for Air Fryer Zucchini Fritters:


2 pounds zucchini, grated

6 ounces crumbled feta

1/4 cup chopped scallions

1/4 cup flour

zest of 1 lemon

1 egg, lightly beaten

2 garlic cloves, minced

2 tablespoons chopped dill

1 tablespoon chopped mint

2 teaspoons baking powder

1 teaspoon kosher salt

1/2 teaspoon black pepper

cooking spray


Time-Saving Tip: Prepare the fritters and refrigerate for an hour before cooking.

Grate the zucchini by hand or using a food processor. Then transfer to a colander that is resting inside the bowl. Toss with the salt and let rest for 30 minutes to an hour. Transfer the zucchini to a towel and squeeze out the excess liquid. Save the liquid for a smoothie or soup.


Combine the zucchini, pepper, dill, scallions, mint, flour, baking powder, garlic, zest, and then fold in the cheese. Shape into 12 equal-sized- patties, about 2 inches in diameter. Refrigerate for an hour.


Preheat the fryer to 400-degrees. Coat the rack with cooking spray and gently transfer the fritters to the fryer. They are delicate so take your time. Cook for 7 minutes, carefully turn them over, and continue cooking for another 7 minutes or until golden.


They're ready! Air Fryer Zucchini Fritters are a new favorite around my house. I quickly learned always to make more than I think because they disappear as quickly as they cook.
