Just Wings



We all love a little heat in our house, but I realize this isn't the case for all of our friends. So while hot wings are a favorite around here, I decided to make a non-spicy version for these folks. Just Wings are perfectly flavored, and while they have a little Sriracha in the mix, I promise it helps round out the flavors without lighting your mouth on fire. I must admit that my oldest son couldn't understand why anyone would want wings that taste like a roast chicken. So be it, he still managed to eat half of the platter before I got a chance to serve them.


Ingredients for Just Wings:


Wings:

3 pounds chicken wings, dried well

2 tablespoons Pereg mixed spices Zahtar

2 tablespoons olive oil

1 teaspoon kosher salt

1/4 teaspoon black pepper

2 teaspoons lemon zest


Sauce:

1/2 cup sour cream

1/2 cup mayonnaise

1 teaspoon Pereg mixed spices Zahtar

4 teaspoons lemon juice

1/2 teaspoon lemon zest


Time-Saving Tip: I like to use a disposable pan, so it cuts done on my cleaning. Prepare the sauce a few hours in advance and keep refrigerated.


Let's see what we need.


We're ready to cook.


Combine the sauce ingredients together and set aside.


Combine the 2 tablespoons of Zahtar, salt, pepper, Sriracha, and oil.


Place the wings in a large baggie and pour in Sriracha mixture. Seal the bag and move the wings around to coat them evenly.


Roasting the chicken wings will take about 45 minutes but as much as an hour. It depends on how crispy you like them. The above picture is pretty much the halfway mark. At this point, turn them over and pop back in the oven until crispy. Once they're ready toss with the lemon zest.


They're ready! Just Wings are crispy, bursting with flavor, and thanks to the lemon zest are fresh tasting. Whip some of these up while watching the game or the next time your friends are over and watch them disappear quickly.
