Oven Barbecued Drumsticks

Everyone loves barbecue chicken but it's not always barbecue season. I don't know about you but when the temperature has dropped and there is snow on the ground we put grilling on hold. So I came up with the perfect barbecue chicken done in the oven. It tastes smokey thanks to a mixture of spices rubbed on the chicken and then the perfect homemade barbecue sauce is brushed on at the end of roasting. The result is perfectly cooked and delicious chicken. If you close your eyes you might even forget you made it indoors.

Ingredients for Oven Barbecued Chicken:

2-3 pounds chicken drumsticks

1 tablespoon olive oil

Dry Rub:

1 teaspoon kosher salt

1/2 teaspoon black pepper

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

1/2 teaspoon paprika

1/4 teaspoon dried thyme

Mix all ingredients together.

Yummy Barbecue Sauce:

1 1/2 cup ketchup

1/4 + 2 tablespoons cup apple cider vinegar

1 1/2 teaspoon molasses

2 tablespoons of honey, depending how sweet you like things

1-2 squirt of Sriracha

1 1/2 teaspoon Worcestershire sauce

1 1/2 teaspoon dry mustard

1 1/2 teaspoon cumin

1/2 teaspoon smoked paprika

1/4 teaspoon of kosher salt

3/4 teaspoon coarse pepper

Please don't be put off by the list of ingredients. This is a very easy recipe and comes together quickly.

Time Saving Tip: The barbecue sauce can be made in advance and kept in the refrigerator. The dry rub can also be made in advance. Definitely use a disposable pan to cook the chicken. It makes clean up a breeze.

Here is what we need.

Let's get cooking!

First, make the barbecue sauce. Combine all of the ingredients into a small to medium- sized saucepan. Stir over medium heat. Cook and simmer for about five minutes. The sauce is ready. Set aside.

Preheat the oven to 450-degrees. Place the drumsticks in a bowl or do as I do and put them in a baggie. Then add the spice mixture and the oil. Seal the baggie and shake it around making sure the chicken is evenly coated all over. I love using baggies since it says time cleaning up.

Place the chicken in the pan and bake for about 30 minutes. Brush with the barbecue sauce and put back in the oven for another 5 minutes or until done.

It's ready! It looks so good. Everyone will love this. It's perfect for a weeknight dinner or for weekend entertaining. Just add a few sides and your good to go.

Enjoy!
