Waffle Breakfast Sandwich


My younger son loves frozen waffles, so it was no surprise when I found a few tucked inside my freezer the other day. As I shifted them from one shelf to another, I remembered our moving day so many many years ago. Our house was all packed up, and as we waited for the trucks and movers to come, my husband ran out to buy breakfast for us. When he returned home, he appeared with waffle and egg breakfast sandwiches. Our two little sons thought this was the funniest breakfast, and I made a mental note never to have him buy breakfast. Now years later, and with my find, in the freezer, I knew what I had to do. I layered toasted waffles with turkey bacon, eggs, cheese, more bacon and then topped them with butter and maple syrup. As I took my first bite, I was amazed just how delicious the combination of the salty bacon, creamy cheese, sweet syrup, and of course, butter tasted. So if you're looking for a breakfast that will make everyone smile, here's my version of our Waffle Breakfast Sandwich.



Ingredients for Waffle Breakfast Sandwich:


3 eggs

4 frozen waffles

2 slices turkey bacon

1 slice processed American cheese

Maple Syrup and Butter for serving.


Time-Saving Tip: Cook the bacon the day before and reheat for a few seconds in the microwave.


Let's see what we need.


We're ready to cook.


Coat a nonstick pan with cooking spray. Heat and add the bacon and cook a few minutes on each side.


Toast the waffles.


In a small bowl, roughly the size of the waffles add the eggs and beat—microwave for 1 minute 20 seconds. I like to use a fork and press down on the eggs until the liquid disperses. Return to the microwave and cook another 30-30 seconds until there is no more liquid.


Now you're ready to build the sandwich. Place a waffle on a plate and top with 1 1/2 slice of bacon. Cover with a waffle and then transfer the eggs to the waffle. Layer another waffle on top and add the remaining 1 1/2 slices of bacon and then cover with the last waffle. Add a pat of butter, and drizzle the syrup all over.


It's ready! Waffle Breakfast Sandwich is so good and takes just minutes to prepare. I can't wait to make this for my sons and see those smiles on their faces.
