I make chicken pretty often around here, so I try to switch up the preparation as much as I can for variety. Since my family especially enjoys bold-flavored foods, I created this Jerk Chicken recipe. While there are lots of ingredients it's simple to prepare. I blend scallions, garlic, and hot pepper along with spices like allspice, nutmeg, and cinnamon with a bit of soy sauce and brown sugar to make the most aromatic marinade. I then marinate the chicken for a few hours and then roast it in the oven. It comes out moist and delicious. Each bite is like a party in your mouth. I promise you this chicken is delicious.
Ingredients for Jerk Chicken Drumsticks:
3 pounds chicken drumsticks
3 tablespoons grapeseed oil
10 scallions
5 cloves of garlic
1 habanero or Jamaican pepper
3 tablespoons red wine vinegar
2 tablespoons soy sauce
2 teaspoons light brown sugar
1 1/2 teaspoons allspice
1 teaspoon of dried thyme
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/2 teaspoon cinnamon
1/2 teaspoon ground nutmeg

Time-Saving Tip: Prepare the marinade a day in advance.

We're ready to cook.
Add all of the ingredients, except for the chicken, into a food processor. Process until the mixture is smooth.
Thoroughly coat the chicken with the marinade; refrigerate 4-6 hours.
Place a rack over a parchment-line sheet pan and spray coat the rack with cooking spray.
Transfer the drumsticks to the prepared rack. Bake in a preheated 425-degree oven until chicken is cooked. Cooking the meat will take 35-45 minutes, depending on the size of the chicken pieces.
It's ready! Jerk Chicken is full of flavor and has the right amount of spice. I like to serve this chicken with Rice Cooker Cumin Rice with Black Beans and Arugula Salad with Avocado and Pickled Onions for a delicious meal.
