Rice Cooker Cumin Rice with Black Beans

As many of you know, I fully admit that I am rice challenged when cooking it the conventional way on the stove. I rely on my rice cooker when I'm preparing rice, and I'm here to tell you that it can make awesomely flavored rice. Most recently, I created Cumin Rice with Black Beans. I started by sauteing onions and garlic seasoned with cumin. I added the rice and cooked a few more minutes and then transferred the mixture to my trusty rice cooker. I poured in chicken broth, and this handy appliance did the rest of the work. Once cooked, I added black beans and a few squirts of lime juice. The result was aromatic and delicious rice that is perfect with chicken, fish, pork, and pretty much anything grilled.


Ingredients for Rice Cooker Cumin Rice with Black Beans:


2 cups, rice cooker measure, medium-grain rice, rinsed until water runs clear

2 cups, rice cooker measure, low sodium chicken broth

1 tablespoon grapeseed oil

1 medium onion, chopped

1 can black beans, rinsed and drained

2 cloves of garlic, minced

1 1/2 teaspoons ground cumin

1/2 lime

2 tablespoons chopped cilantro

1/4 teaspoon kosher salt

When using a rice cooker always use the measuring cup and spatula that comes with the cooker.

Time-Saving Tip: The rice can be cooked a few hours in advance and kept on the warm setting. Add the rest of the ingredients right before serving.

We're ready to cook.



Cook the onion and oil together for 5 minutes; stir in the garlic, cumin, and rice. Saute a couple of minutes on medium-low heat.


Transfer the mixture to the rice cooker. Add the chicken broth and enough water to reach the white-rice 2 cup line.


Once cooked fluff with the spatula, fold in the rest of the ingredients and stir in half a juiced lime.


It's ready! Rice Cooker Cumin Rice with Black Beans was devoured. The combination of flavors work so well together. This is one of those recipes that goes so well with everything that once you make it you'll mbe making it over and over again.
