Friday Night Chicken


Friday Night Chicken is perfect for weeknight cooking. It's so easy to make and rewards you with great flavor. Ingredients for Friday Night Chicken:

serves 2-4


4 bone-in chicken thighs

2 tablespoons olive oil

1 teaspoon Herbes De Provence

zest of 1 lemon

1 large clove garlic, minced

1/2 teaspoon Kosher salt

1/4 teaspoon black pepper


Time-Saving Tip: I like to use a disposable baking pan for this recipe since it makes clean-up a breeze.

Preheat the oven to 450-degrees.

In a small bowl combine the Herbes De Provence, lemon zest, olive oil, garlic, salt, and pepper. Rub it all over the chicken, including under the skin. Put chicken in a baking pan. Roast for about 30-40 minutes depending on the size of the chicken thighs.
