Oven-Baked Salmon Scampi Style


When Fish Friday rolls around, I'm always ready for something fresh and delicious. So I reached for my favorite go-to fish and created Oven Baked Salmon Scampi Style. Salmon is simply seasoned with salt, pepper, lemon, and garlic. It's then baked along with a bunch of baby cauliflower for the perfect one-pan meal. No mess, no fuss, and it's totally flavorful and healthy. When done, the salmon get an extra squeeze of lemon and a shower of fresh parsley. The classic scampi flavors are ideal with the salmon.


Ingredients for Oven-Baked Salmon Scampi Style:


1 3/4- 2 pounds salmon, cut into fillets

1 1/2 pounds baby cauliflower

4 tablespoons + 2 tablespoons + 1 tablespoon olive oil

4 teaspoons fresh lemon juice

2 teaspoons minced garlic

2 teaspoons grated lemon peel

1/4 cup chopped parsley

kosher salt

black pepper

fresh lemon for serving

We're ready to cook.



Spread a sheet pan with a tablespoon of oil; set aside.


If you have a large piece of salmon cut it into equal-sized fillets. I cut down the middle first then cut eat section into smaller pieces.


Trim the baby cauliflower and slice some of the thicker stalks in half. Toss the vegetable with 2 tablespoons of oil and season with salt and pepper.


Combine the 4 tablespoon of oil, garlic, lemon peel, and juice in a small bowl.


Transfer the salmon to the coated sheet pan. Season the fish with salt and pepper; brush the fillets with the garlic mixture. Place the cauliflower around the fish and transfer the pan to a preheated 400-degree oven. Bake 8-11 minutes until the fish is done. The thickness of the fish will determine how long it cooks.


It's ready! Oven-Baked Salmon Scampi Style is so easy to prepare and so good. I love it with an extra squeeze of lemon when it comes out of the oven.
