Kids In The Kitchen: English Muffin Pizza

When I was trying to decide on what to make for this week's Kids in The Kitchen series, I just happened to lock eyes on a stack of English Muffins on my counter and knew pizza was in order. I remember growing up and making English Muffin Pizzas with my friends and thought they were so fun to prepare and delicious to eat. So why not have the junior chefs in your house make everyone lunch today? All they need is pizza sauce or any tomato sauce will do, mozzarella cheese, and toppings. With a little help from mom or dad and the oven soon, they will be enjoying homemade pizza. I had so much fun making these with my 20-year-old son so I can tell you that they're kid-approved and so yummy!

Ingredients for English Muffin Pizza:

4 English Muffins

1 cup of pizza sauce

1 cup of shredded mozzarella or an Italian Blend

Toppings such as sauteed veggies, meatballs, chicken, pineapple and ham, or sliced olives

Time-Saving Tips: Have your kids line up all of the ingredients before they get started making their pizza.

Let's see what we need.

We're ready to cook.

Have your chefs half the muffins by carefully pulling them apart or you giving them a hand cutting them in half. Then the cooks need to slip all of the pieces in the toaster and cook until crispy. The toasting ensures that the pizza will have a crunch and not be all mushy when cooked.

Have the cooks transfer the toasted muffins to a parchment-lined sheet pan. Divide the sauce evenly among all of the halves; this is about a heaping teaspoon. Then sprinkle some cheese on the sauce. If the cook in charge wants to add some topping, it's best to sprinkle half of the cheese, then the toppings, and then the rest of the cheese. This way, the toppings stay in place and get cheesy. With a little help from you, transfer the pan to a preheated 400-degree oven and bake until the cheese is gooey.

They're ready! English Muffin Pizzas are delicious, and big kids love them too. Here's a picture of my son taste testing one as soon as they came out of the oven. We had fun making and eating them.
