Scampi Style Chicken Wings

These wings are garlicky and loaded with herbs. Everyone loves chicken wings! They're a favorite game time snack, an irresistible appetizer or even a casual meal. The most common are buffalo wings, but as I was preparing dinner the other night it occurred to me that adding an Italian twist to chicken wings would be great. So I set out to prepare Scampi Style Chicken Wings and the result was awesome!


Ingredients for Scampi Style Chicken Wings

3 pounds of chicken wings

1 cup of white wine or dry Vermouth

olive oil cooking spray

1 teaspoons grated lemon peel

4 garlic cloves, finely chopped

1/4 cup parsley, chopped

2 teaspoons fresh lemon juice, strained

1 teaspoon Extra Virgin olive oil

Kosher salt

pepper


You will also need a large baking pan, tongs and spatula.


Time saving tip: Whenever I make chicken wings I use a disposable pan because it makes clean up a breeze.


Here's what we need.



We're ready to cook.


Clean the chicken wings and dry if you prefer not to clean the wings - just dry. Place the wings in a large baggie and add the wine. If you don't already have a bottle of wine opened and don't plan on drinking the rest of the bottle, Dry Vermouth is a good substitute. Seal the baggie and place it flat on a plate and refrigerate for three to four hours.



About 30 minutes before you are ready to take the chicken out of the refrigerator, preheat the oven to 500 degrees. Drain and dry the chicken when it is finished marinating. Generously spray cooking oil on the bottom and sides of the pan. All of the wings fit into one full-size disposable pan. If this size pan does not fit in your oven, you can use two smaller ones.


Roasting the chicken wings will take about 45 minutes but as much as an hour. It depends how crispy you like them. The above picture is pretty much the half-way mark. At this point, turn them over and pop back in the oven until crispy.



Combine the fresh lemon juice chopped garlic. The acid in the lemon juice will cut some of the sharpness to the garlic.


Toss the cooked wings with the grated lemon peel, garlic soaked with lemon juice and olive oil; season with salt and pepper.



They're ready! Scampi Style Chicken Wings are so good that they're hard to stop eating.
