When you're looking through your pantry and trying to decide what to make for dinner, it's hard to beat Spaghetti with Garlic and Oil. This dish has so few ingredients and relies on good pasta, excellent olive oil, lots of garlic, crushed red pepper, and I like to add anchovies as well. The anchovies all but disappear when cook but give this dish a little something extra. Then sprinkle with some cheese, and it's delicious. This dish is simplicity at its best.
Ingredients for Spaghetti with Garlic and Oil:
1 pound spaghetti, cooked according to package directions
1/2 cup of olive oil
8 cloves garlic, chopped
3/4 teaspoon crushed red pepper
6 anchovies, rinsed and dried
4 tablespoons chopped fresh parsley
grated parmesan or pecorino romano cheese for serving
Time-Saving Tip: Prepare all of the ingredients up to a few hours in advance.

Pour the in a pan and add the anchovies. Saute until the anchovies breakdown. Add the garlic and cook over low heat for a minute and add the pepper and saute another minute. At this point, you will notice that the anchovies have pretty much disappeared.
The sauce is ready, just toss it with the pasta and then add the parsley;season with salt and pepper.
It's ready! Spaghetti with Garlic and Oil is one of my favorites. I love how so few ingredients can create such a delicious and satisfying dish. I think it's perfect for any night of the week, and leftovers are great when mixed in a frittata.
