Double Chocolate Rice Krispie Treats

This gooey chocolatey Rice Krispie treat is a must-have for after school playdates. The treats that we know so well are even more irresistible speckled with mini chocolate chips and chocolate icing drizzled on top. Give them a try...you will be so glad that you did!


Ingredients for Double Chocolate Rice Krispie Treats:


4 1/2 cups Rice Krispies

30 big marshmallows

2 tablespoons of butter, room temperature

1/4 teaspoon vanilla extract

1/2 cup semi sweet mini chocolate chips

8 x 8 pan

Time-Saving Tip: Pour a glass of milk so it's ready to sample some of the treats that stick to the bowl when you are pouring it into the pan.


Let's see what we need.


Now we can make the treats.



Prepare the pan. Cut a piece of parchment paper to fit in the bottom of the pan.Spray all over with cooking spray. This will make removing the Double Chocolate Rice Krispie Treats easily in one piece.



Combine the marshmallows and butter in a microwave-safe dish. Cook on high for a couple of minutes. Watch the bowl in the microwave and when you see the marshmallow puff up it is done. This happens pretty fast. Then stir up the marshmallows and the butter.



Add the Rice Krispies to the bowl and combine making sure all of the Rice Krispies are coated with the marshmallows and butter. Then add the chocolate chips and evenly distribute. Some will melt a little bit which is fine. This process needs to be done fairly quickly because it is harder to combine all of the ingredients as it cools.



Pour the mixture into the pan. Make sure it is spread out into all of the corners. Let cool.




Remove the treat in one piece and place on a rack over a board or even parchment paper. Then take the chocolate glaze and drizzle as much as you would like on the big treat. You will have more glaze than you need. It tastes great on ice cream, muffins or even waffles. Or it is so good you just might want to eat the rest out of the bowl. Let the glaze set a bit and then cut it up into pieces.
