Acai Fruity Chia Pudding

With the summer temperatures soaring, I've been reaching for lighter breakfast foods loaded with fruit. Most recently, I combined the superfoods Acai and Chia seeds and added pureed banana, berries, and light coconut milk to the mix to create a light and flavorful treat. Acai Fruity Chia Pudding is healthy and delicious and especially tasty when topped with extra berries. While I've loved this for breakfast, this pudding would also make a great snack.


Ingredients for Acai Fruity Chia Pudding:

4-6 servings


3/4 cup Chia Seeds

1 - 13.5 ounce can Coconut Milk

3 packs Acai, defrosted

1 banana

1 cup frozen or fresh berries

5 tablespoons agave

3 teaspoons vanilla


Serving with berries.

4-6 jars or small glasses


Time-Saving Tip: These need to be made at least 8 hours in advance.

Blend the banana, berries, acai, agave, coconut milk, and vanilla until smooth.


Pour the acai mixture into a large bowl and whisk chia seeds until well combined. Transfer the mixture to individual jars or glasses. Cover and refrigerate for at least eight hours before serving.



They're ready! Acai Fruity Chia Pudding is the perfect way to start the day. I especially love how it's waiting for me in the morning and all I have to do is add berries and eat.
