Baby Romaine Melody


This salad is the most delicious combination of flavors. It really is irresistible. Figs and goat cheese take center stage for this Baby Romaine Melody. Their flavors are enhanced with tart pomegranate seeds and sweet and spicy candied pecans. Add some grilled shrimp for a light entree.


Ingredients for Baby Romaine Melody:

serves 4-6


3 ounces baby romaine lettuce

4 firm but ripe figs, sliced in half lengthwise

2 ounces of goat cheese, crumbled

1 tablespoons sliced chives

1 1/2 tablespoons pomegranate seeds

2-3 tablespoons broken up candied pecans, Click HERE for Candied Pecans recipe

3 tablespoons extra virgin olive oil

1 tablespoon balsamic vinegar

kosher salt

course pepper


Time Saving Tip: Make the candied pecans earlier in the day or even the day before and the salad will come together very quickly.

Now let's make this salad.




Start off by adding the lettuce to the bowl. Then place the figs so they are all facing cut side up. Now add the goat cheese, candied pecans, and the pomegranate seeds and sprinkle with the chives.


Season the salad with salt and pepper. Drizzle with about 3 tablespoons of the extra virgin olive oil and 1 tablespoons of balsamic vinegar to the salad and toss. Now give it a taste and adjust the seasoning and even add more vinegar if you want. The salad is now ready for you to eat. I really love this salad and am sure you will, too.
