Easy Chicken Enchiladas


Happy Cinco De Mayo! I'm celebrating with Easy Chicken Enchiladas. Juicy rotisserie chicken, purchased salsa verde, and creamy cheese star in these delicious enchiladas. They come together quickly and are bursting with flavor. This means there's still time to make this for dinner tonight!

Ingredients for Easy Chicken Enchiladas:


1 rotisserie chicken

2 -17 ounce bottles of salsa verde

3 cups Shredded Monterey Cheese

1/3 cup chopped cilantro

1/4 cup finely chopped white onion

16 corn tortillas


You will also need a 9 x 13 baking dish.


Time-Saving Tip: Prepare the filling a few hours in advance.

Shred the chicken and place it in a bowl.


Stir in 3/4 cup salsa, 1 1/4 cups of cheese, cilantro, and onion.


Cover the tortillas with a damp paper towel and microwave for 40-50 seconds. Place 1/4 filling in each tortilla and roll to seal.


Spread 1 cup of salsa in a baking dish. Transfer the filled tortillas to the dish. Cover with 1 1/2 cups of salsa and the rest of the cheese. Cover the casserole with foil and transfer to a preheated 400 -degree oven. Bake for 30 minutes until the cheese is melted and gooey.
