Bacon, Egg, and Cheese


New Yorkers pretty much say what we mean and mean what we say. We have places to go and things to do so we don't have much time to quibble. So when it comes time to order our favorite breakfast sandwich, a Bacon, Egg, and Cheese, we don't mess around. There is no bread choice because it has to be a Kaiser roll, maybe you prefer sausage over bacon and prefer 3 eggs over 2, but that's as far as it goes. A Kaiser roll topped with over-easy eggs that are a little soft, but not so soft they drip on your shirt; bacon crisp but chewy, topped with slices of American cheese, and ketchup. Sprinkle with a little salt and pepper, and your good to go.


Ingredients for Bacon, Egg, and Cheese:

1 serving


1 Kaiser Roll

3 large eggs

3 slices of cooked bacon

*2 slices of American cheese

ketchup

hot sauce

kosher salt

black pepper

cooking spray


*I was making this sandwich for my son, Steven. He voted on processed cheese slices for this sandwich. I agree it's the best for this, and that's what I used. You can also use American.


Time-Saving Tip: Cook the bacon the day before and store it in a covered container in the refrigerator. Let's see what we need.


We're ready to cook.


Slice the roll in half. The NY deli's don't warm them, but if you're like Steven, you will want to heat this for a couple of minutes in the oven. Do not toast or make crusty, and please don't heat this in the microwave. You can skip this optional step.


I like to crack all of the eggs into a cup or small bowl.


Coat a nonstick pan with cooking spray; once heated, add the eggs. Cook the eggs until set and then flip. Gently cut the eggs apart while before turning. Add the cooked bacon to the pan to heat. As the eggs continue cooking, using the back of a spatula gently press the yokes to break them. Continue cooking another minute until the eggs are still soft but not too runny.


Transfer the eggs to the bottom half of the roll and season with salt and pepper. Add the cheese, bacon, and a few squirts of ketchup.


It's ready! Bacon, Egg, and Cheese is the quintessential breakfast sandwich. The soft eggs, salty bacon, gooey cheese, and ketchup melt together in every bite. It doesn't get any better than this.
