Caesar Salad with Avocado Dressing and Grilled Croutons is pretty much a perfect salad. It's not the first time I've added avocado to my Caesar Salad and for a good reason. The avocado adds the ideal creaminess to the dressing and transforms this favorite into the most flavorful and creamy dressing to toss with the salad. People are always amazed at how delicious this salad is, and when I share my secret, it becomes an immediate favorite. Add some grilled croutons and some crisp romaine, and you will be so happy that you did.
Ingredients for Caesar Salad with Avocado Dressing and Grilled Croutons:
Salad:
3 heads of romaine lettuce, sliced
Dressing:
1 avocado
3 anchovies, rinsed and dried
1 tablespoon + 1 teaspoon Dijon mustard
3 cloves of garlic, minced
3 tablespoons of grated parmesan cheese
1 tablespoon Worcestershire Sauce
4 tablespoons fresh lemon juice
4 tablespoons olive oil
4 tablespoons water
1/4 teaspoon kosher salt
1/8 teaspoon black pepper
Grilled Croutons:
1 baguette, cut into diagonal 1/2" - 3/4 " slices
4 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon pepper
Time-Saving Tips: Prepare the Croutons and the Dressing a few hours before serving.

Slice the bread and toss with oil, salt, and pepper. Place the bread on a preheated grill and cook both sides until the grill mark appears.
Add all of the dressing ingredients to the bowl of a food processor. Process until the dressing is smooth; set aside.
Slice the lettuce and place in a bowl and toss with of the dressing. Add some of the croutons and toss some more.
It's ready! Caesar Salad with Avocado Dressing and Grilled Croutons is delicious. The dressing is so delicious you might find yourself even slathering it on sandwiches. But for now, it makes a great salad.
