My sons love Caprese salad especially when the tomatoes are from our summer garden. Since our harvest is a short season I decided to try a new twist to a family favorite. Ethan and Steven love it. In my book, if the boys are happy so am I.
Ingredients for Caprese Salad with Spinach:
5 ounces baby spinach
1- 8 -ounce container of Ciliegine, "cherry size" mozzarella
1-pint cherry tomatoes
3/4 cup extra virgin olive oil
1/4 cup balsamic vinegar
2 tablespoons chopped basil
1/4 teaspoon Dijon mustard
kosher salt
black pepper
Time-Saving Tips: The salad can be made 1-2 hours in advance and refrigerated. Dress before serving.

We're ready to make the salad.
Add the mustard, oil,vinegar, and chopped basil to a small jar . Cover and shake until well combined. As you probably know by now,I like making my salad dressings in jars. It's so easy to just add the ingredients and shake. Set aside.
Place the spinach in a large bowl or on a plate. Decoratively add the tomatoes and then Ciliegine. Season with salt and pepper and Pour some of the dressing over the salad. You might have extra.
It's ready! This salad is so pretty, so good, and so easy. This is one of those salads that everyone loves and comes together so quickly. Serve with some nice crusty Italian bread and you're good to go.
