Do you ever find yourself wondering what you should do with leftover roast chicken? This sandwich is your answer. Sliced roast chicken nestled in special sauce and topped with sweet roasted peppers and red onions make this delicious. Ingredients for Roast Chicken and Roasted Pepper Sandwich:
Sandwich:
leftover roasted chicken - whatever is left will do
1/2 - 1 baguette
1- 2 whole roasted peppers, seeded and halved
1 small red onion thinly sliced
Boston lettuce
kosher salt
black pepper
Special Sauce:
1 1/2 cups mayonnaise
1/3 cup + 2 tablespoons ketchup
1 tablespoon + 1 teaspoon chopped red onion
2 tablespoons chopped dill pickle
1 teaspoon Worcestershire Sauce
The special sauce keeps well in the refrigerator for a couple of weeks. It's great on any sandwich or burgers.
Time-Saving Tip: The special sauce can be made in advance.

In a small bowl combine all of the Special Sauce ingredients. Looks pretty special, right?
I cut what was left of the white meat from my leftover chicken.
For a 12" piece of baguette spread 3 tablespoons of special sauce on the bottom slice of bread. Spread the leftover chicken on top. Season with salt and pepper. Then generously pile on some roasted peppers, followed by some onions. Garnish with a few pieces of lettuce. Coat the top piece of bread with another 2 - 3 tablespoons of special sauce.
It's ready! It looks perfect and tastes delicious. Serve with a few chips and you’re good to go.
