Confetti Brookies

I love it when I can rely on some shortcuts in the kitchen. So these days, I am happily using Miss Jones Baking Co. mixes to make the most tempting treats. I grabbed a Fudgy Brownie Baking Mix and Confetti Pop Cookie Mix to make the best Confetti Brookies. I then grabbed a container of Confetti Pop Frosting and melted it down for glaze, and then sprinkled on some of the confetti that comes with the frosting. These make the fudgiest and yummiest Brookies ever, and they are so cute! They were so good that I'm already getting requests to make some more. Ingredients for Confetti Brookies:


2 eggs

2 tablespoons water

1/2 cup vegetable oil


1 bag Miss Jones Baking Co. Confetti POP Cookie Mix

1 egg

5 1/3 tablespoons softened (not melted) butter


1 container Miss Jones Baking Co. CONFETTI POP Frosting


Time-Saving Tip: Prepare the Confetti Brookies up to a day in advance. Store in an airtight container.

We're ready to bake.


Stir together the brownie mix, eggs, water, and oil until just combined.








Pour the mixture into a 9x9 baking pan lined with parchment paper.













Using a hand mixer, beat the egg and butter together until well combined and fluffy. Add the cookie mix and beat on low until well combined and can be formed into a ball.



Drop spoonfuls of the cookie batter over the uncooked brownies-no need to smooth the cookies dough. Cover the pan with foil and bake in a preheated 350-degree oven for 20 minutes. Remove the foil and continue baking until the cookies are golden; another 25 minutes or so. Let cool completely.

Once the Confetti Brookies are cool, prepare the glaze. Scoop about half of the frosting into a microwave-safe bowl. Microwave on high until it is a pourable consistency. Start by heating the frosting for 25 seconds and stir it. If it still is not softened, continue heating a bit more.


Remove the Brookies from the pan. Using a fork or spoon, drizzle the icing on top and sprinkle with the confetti. Cut into portions for serving. I cut mine into 9 large pieces.


They're ready! Confetti Brookies are just as fun to create as they are to eat. The rich chocolate brownie is the perfect backdrop to the cookie and frosting. I will definitely be making these often.
