Egg and Prosciutto Toast

Weekday mornings are usually busy getting ready for school and workdays, so there isn't too much time to fuss in the kitchen. Though, it's still possible to have a delicious breakfast like Prosciutto and Egg Toast. Flavorful sourdough or country bread is toasted, lightly buttered, and top with sweet-salty prosciutto, perfectly cooked sunny side up eggs, and a sprinkle of chopped chives. Each bite is packed with flavor, and everyone loves it. This breakfast is special enough for weekend brunch too.


Ingredients for Egg and Prosciutto Toast:

3 tablespoons olive oil

1 egg

2 slices prosciutto

1 piece of sourdough or country bread

butter

chopped chives

kosher salt

black pepper

kosher salt

Toast the bread and light spread with butter. Top with two slices prosciutto.


Crack the egg (s) in a cup or small bowl. Lightly coat a non-stick pan with cooking spray. Once the pan is heated, gently pour in the egg. Gently cook until the white firms up and them the egg is ready. Place one egg on top of the prosciutto covered toast; season with the salt, black pepper, and sprinkle with chopped chives.
